Stuffed Peppers

You can never have enough recipes for grass finished ground beef.

Peppers are in season as I type, and this recipe has become our new favorite for stuffed peppers.

Ground beef, rice, cheese, and a few simple garden ingredients is all it takes to make this delicious meal.

We like leftovers, so the ingredients listed below are doubled. Go ahead and half those for a smaller batch.

This recipe is adapted form Jennifer Segal’s stuffed peppers recipe at Once Upon a Chef. The original recipe uses baking soda to “tenderize” the meat, but I do not recommend that.

I love the texture of the bell peppers from roasting compared to other recipes we’ve used where they turn out more soft and mushy.

Adjust the ingredients to your liking and enjoy!

Ingredients:

2 lbs grass finished ground beef

6 large bell peppers

6 tablespoons extra-virgin olive oil

2 medium onion finely chopped

6 cloves garlic, minced

3 teaspoons chili powder

1 teaspoon ground cumin

1/2 teaspoon oregano

16 oz tomato sauce or stewed tomatoes

2 cups cooked rice

3 cups colby jack cheese

Step 1.

Prepare and roast the peppers. Preheat oven to 425F. Half the peppers from top to bottom and remove seeds and membrane. Place the halves cut side up in a 9x13 baking pan. Drizzle with 2 tablespoons olive oil and roast until tender-crisp. About 20 minutes.

Step 2.

Saute onions and garlic. Heat 4 tablespoons olive oil over medium heat. Add chopped onion and saute until soft. Add the garlic and saute another minute.

Step 3.

Brown the beef. Add ground beef, chili powder, cumin, and oregano. Cook on medium-high heat until the beef is browned and almost cooked.

Step 4.

Add tomato sauce. Add tomato sauce or stewed tomatoes and bring to a boil to finish cooking the meat

Step 5.

Add rice and cheese. Stir in the cooked rice and half of the cheese until cheese is melted. Remove from heat.

Step 6.

Fill the peppers. Spoon the filling into each pepper half and in between peppers if there is extra. Top with the other half of the cheese.

Step 7.

Bake. Bake for 10 to 15 minutes until cheese is melted and slightly browned.
