If I couldn’t produce grass finished beef in a way that is good for the land, I wouldn’t do it.

My overarching goal with the farm is to regenerate a functioning grassland ecosystem.

Something that mimics the prairie that once existed here.

It should be healthy, stable, diverse, and full of life.

A byproduct of that is real, nourishing food in the form of grass finished beef.

It takes time for life to return to degraded land, but some things happen very quickly.

One of the early indicators I watch is grassland birds. As soon as we started converting cropland to grassland, the birds started showing up.

I take that as a sign I’m headed in the right direction, and now I’m working with Audubon to confirm what I see and continue to improve.
