Ground Beef Burrito Bowl

Here’s a simple and satisfying recipe I think you’ll enjoy.

Ingredients:

1 pound ground beef

1 cup uncooked rice, rinsed

1 can (15oz) black beans, drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies or salsa

1 onion chopped (omit if using salsa with onions)

2 cloves garlic, minced

2 teaspoons chili powder

1 teaspoon cumin

Salt and pepper to taste

2 cups beef bone broth

1 cup shredded cheese

Fresh cilantro, and lime

Avocado and sour cream

Ingredients

I used a jar of homemade salsa (which has onions) instead of chopped onion. I also used garlic powder instead of minced garlic.

Step 1.

Heat a large skillet over medium high heat. Brown the ground beef. Add onion and garlic. Saute, stirring frequently, until onions begin to soften

add seasonings

Step 2.

When onions have softened, stir in chili powder, cumin, salt and pepper

stir in rice

Step 3.

Add the bone broth, rice, black beans, corn, diced tomatoes (or salsa). Stir to combine

boil the mixture

Step 4.

Bring the mix to a boil. Reduce heat to low. Cover and simmer for 20 minutes or until rice is tender. .

Top the mixture with shredded cheese and cover to melt.

Step 6.

Serve burrito mixture in a bowl . Top with sour cream, fresh cilantro, avocado, and a squeeze of lime.
